Grown in the Acatenango Valley, Santa Felisa's coffees benefit from an ideal mix of cool mountain breezes, warm days, and crisp Pacific evenings. This unique climate helps concentrate sugars in the fruit, resulting in dense, sweet beans with vibrant flavor.
Cherries are selectively handpicked only at peak ripeness, then processed as a traditional natural, left to dry slowly in the whole cherry on raised beds to build sweetness and body.
This lot is Oval Laurina, a naturally low-caffeine mutation of Bourbon first discovered on Réunion Island. The plant is delicate and slow-growing, with small, elongated cherries that give the variety its name. In the cup, it's known for a soft, gentle profile with less bitterness and pronounced natural sweetness compared to standard Arabica varieties.
