Cherries are selectively handpicked only at peak ripeness, then rested through an extended natural fermentation that draws out deeper complexity before drying slowly on raised beds under careful, even airflow.
This lot showcases Sudan Rume, a rare heirloom variety tracing back to South Sudan's Boma Plateau, predating even Bourbon and Typica.
